Juicy Chicken Hamonado Recipe

This recipe is so easy but it  just takes time to cook. However, once you taste the outcome, it is fulfilling because it is made of sweat and blood (figuratively, okay? Haha!) Let's start now while the night is still young!

Ingredients:

4 lbs whole chicken
1 can pineapple slice, liquid reserved
1 cup pineapple juice
2 tbsp patis or fish sauce
1 tbsp oyster sauce
1 tbsp calamansi or lemon
3/4 cup brown sugar
2 cloves garlic
Tanglad (Lemon Grass)
salt and pepper to taste

Procedure:

1. Rub the whole chicken with oyster sauce, fish sauce or patis, a cup of pineapple juice, calamansi or lemon juice, garlic, salt and pepper. Then marinade overnight.
2. Preheat oven to 375 degrees Celsius or you can also use your turbo broiler. Insert lemon grass inside the chicken and cover it with aluminum foil to evenly cook the meat first without burning some portion of the it. Roast for 35 minutes per pound of chicken.
3. Once it is cooked, remove the foil cover from the chicken. Please combine the reserved liquid from the pineapple slices plus the brown sugar. Pour it on top of the chicken.
4. Let it cook for 10 minutes on each sides of the chicken or until there's a glaze on top of the skin already.

5. When the chicken is done, arrange on a serving platter and garnish it with pineapple slices. You can pour some drippings of the sauce on the roast to make it more shiny. Finally, savor the moment!

Whoaa! What a wonderful feeling when you do something for the first time and it turned out to be very good. Is it your first time having this recipe? Please share your experience also. Thanks to the creator of this recipe. Ciao!!
